Nestled in the hills of Castellina in Chianti, inside Locanda Le Piazze, our farm-to-table dining experience is curated by Chef Guido Haverkock, who embraces the sustainable philosophy of founder Natacha Fazal-Karim. Together, they blend the rich traditions of Tuscany with global inspirations drawn from their travels around the world.

At Tavola di Guido, Chef Guido blends Tuscan tradition with global flair, crafting dishes that are both rooted and refined. Inspired by local ingredients and years of culinary exploration, his approach is thoughtful, seasonal, and ever evolving.
When not in the kitchen, Guido finds joy in music – from rock and blues to hip-hop and acid jazz – often playing as he cooks. He also loves to travel, experiment with new techniques, and ride his motorcycle through the Tuscan countryside.

Tavola di Guido brings the essence of Tuscany to the table with a seasonal, farm-to-table approach.
Led by Chef Guido Haverkock, the menu blends local tradition with global influences, using ingredients sourced just 3 km away from our very own One Belvedere Tuscany Farm – where we grow fruits, vegetables, herbs, eggs, honey, and olive oil through regenerative farming methods.
Many of our staples are prepared in-house, including bacon, vinegar, mustard, jams, kombucha, soy sauce, muesli, and fresh breads – reflecting our deep commitment to sustainability, craftsmanship, and culinary innovation.
Extra virgin oils
At Tavola di Guido, we use Olio, Alya, and Amaya – our own organic extra virgin olive oils from One Belvedere Tuscany Farm. Grown on 12 hectares of Maurino and Leccino olive trees, hand-harvested, and cold-pressed, these oils reflect the purity and richness of biodynamic farming in Chianti.
