Guido Haverkock is an extraordinarily talented chef.
His love for food, poised between tradition and innovation, is at the heart of the special culinary experience you’ll have at Tavola di Guido.
He applies his culinary vision by exploring many of the new dietary requirements and trends, catering to his guests’ palates and requests.
He is passionate about music, especially rock, blues, hip-hop, and acid jazz: Guido loves to listen to different genres when he is in the kitchen preparing his dishes.
In his free time he travels, explores new cooking techniques, and loves riding his motorcycle.

The Restaurant, run by our Chef Guido Haverkock and his crew, offers cuisine made with the best ingredients Tuscany has to offer according to the season.
Our One Belvedere Farm, less than 3 km away, provides us with fruit, vegetable and extra virgin olive oil (EVO) derived from regenerative agriculture. The rest of our products are sourced from carefully selected Tuscan producers.
As much as possible, we produce our own staples, such as bacon, vinegar, mustard, and bread —among others.

EVO
At the Tavola di Guido restaurant we use Olio, Alya and Amaya, the extra virgin olive oils from our One Belvedere Farm: 12 hectares of olive trees of the Maurino and Leccino varieties, cultivated with organic and biodynamic techniques. The olives are harvested by hand and cold pressed.
